Pancakes

Well my headaches eased off a bit now and I just got my breakfast.

Pancakes are my faaaaaaaav food! so I made up some of the Dairy free Yorkshire pudding mix (Recipe here) and with some lemon and sugar totally yummy!

It is so surprising how little difference milk makes in so many things and that dairy free cooking can be so easy

Good morning, not a recipe today well not yet anyway

Very annoyed today, my poor baby girl's reflux is very bad again which = very bad nights for mummy, so I'm sat here with a headache, knackered and turns out one of the cats had wee'd behind the sofa, so I pulled it out and we now have damp behind the sofa. Safe to say I am now in a very bad mood!

We have the Health Visitor visiting tomorrow to weigh Alyssa, I am really sure she has gained weight in fact I think that's why the ranitidine is no longer helping her, because it worked when she didn't gain weight but now she is gaining she is drinking more and its making the reflux worse.

I'm currently sat stressing in a messy living room, where I pulled the sofa out and cleaned behind it and THEN put down sliced lemon and orange (A tip for keeping cats out given to me by the lovely ladies at http://www.totzrus.co.uk/ ) my PND has had a strange effect on me and left me very obsessive about clean, if theres a mess and I go to bed and leave it I can't sleep.

and if I have to go out to take the kids to an appointment I have to buy cleaning stuff, when I took Sophina to the Dermatologist I spent £40 in wilko on cleaning stuff and with Alyssa and her jabs I almost bought more cloths, I didn't need them I just felt I had to have them, I forced myself to put them back... and got a plug in air freshener instead lol.

Needing things clean isn't a bad thing per say, BUT, I could do with not being obsessive about it!

and as always when I put a personal blog entry I have to put something I'm sad about and something I'm glad about so...

I am sad about my headache which is horrible....
I am glad about... Headache tablets in the drawer lol

Dairy free smoked haddock and leek fishcakes

So we used to buy Smoked haddock and leek fishcakes from Tesco but they contain cheese and now I'm dairy free I can't have them, but I absolutly love them!

So I decided to give it ago myself and they tasted exactly like the tesco ones! and you can freeze them too!

Ingredients (Makes about 10 fishcakes)

450g smoked haddock
1 leek
5 medium potatos
1 egg
Breadcrumbs (use gluten free bread for gluten free)
Pepper
1 tbs Lemon juice
2 tsp Mixed herbs
small amount of oil

Method

oven cook the haddock

Grate or finally chop 1 leek and the potatoes (I used the grating attachment on my food processer)
Add the haddock, lemon juice, herbs and pepper mix well

Then take the mix out and form into pattys
Heat a pan with the oil in it so its very hot

Cover the haddock pattys in egg then breadcrumb and fry quickly

I find cooking them so the fish is cooked and then letting them cool on a wire rack then re heating them to make the breadcrumb golden makes for a firmer fishcake.

So easy to make and deffinatly yummy!

These are not really sutible for babies due to a high salt content from the smoking process but if you use unsmoked haddock then its fine for any age.

Dairy free fishfingers ideal for weaning

These fishfingers are totally yummy so easy to make and contain no additives, salt or any other naughty stuff commercial ones contain...



To make these I used the left over white fish from my dairy free fish pie I made yesterday I kept 2 coley portions and it was enough to make 6 fishfingers...

They can be gluten free using variation

Ingredients

2 white fish portions (I used coley but any would be fine)
Breadcrumbs
one egg 

Method

Beat the egg in a dish
Cut the white fish into strips (I freeze my fish when I purchase it and its easier to cut the fish into strips while it is frozen)
pop some bread crumbs onto a plate

Dip each fish strip into the egg, then the bread crumbs, then egg and finally bread crumb again
Pop into a hot frying pan and quickly fry each side to crisp them
after sealing put into a hot oven about gas mark 7 (which is about 425F and 220C ) for about 5-7 minutes

and bish bash bosh you got yummy fish fingers

Perfect for weaning as they are able to hold them and they dont contain any nasty stuff

Dairy free yorkshire puddings

Now who doesn't love a good yorkshire pudding
I know I do, and I was very disapointed that obviously being dairy free for the sake of my baby girl I couldn't have any... well I was wrong, I considered using a milk alternitive to make them but I was advised on http://www.totzrus.co.uk/ by another mum who's daughter was dairy free that these did not work well and made them too sweet. she also said about a family memeber making them using water...

So I tried it using the following

2 eggs
1 cup of self raising flour
1 cup of cold water
pinch of salt and pepper

Mixed it very well and cooked in a muffin tray for 30 minutes

and it worked amazingly they were slightly heavy so next time I will use less batter in each one I think this will make them perfect

These would also be good for a finger food for a baby, but just leave the salt out!

Burger recipe - Dairy and gluten free, suitable for babies

This is my burger recipe, its dairy and gluten free and is suitable for babies age 6mths+

Ingredients

500g minced beef (The better the mince the better I prefer using lean steak mince)
2 medium onions
2 tbs of mixed herbs
1 tsp mustard powder
1 clove of garlic (or garlic powder)
1 tsp salt (Leave this out if making for babies)
2 tsp pepper
1 egg

Method

Finely dice the onions and mix with the dry ingredients and egg.
Add to the mince and mix thoroughly, you will know when its mixed properly as the mince becomes one big ball.

Heat a pan with a small amount of  oil, then shape the mince into small pattys being careful not to make them too big or they won't cook properly.

Cook thoroughly and serve

Variation: for spicy burgers finely chop chilli peppers and add to the mix before cooking

Dairy free Korma

Easy to make Korma sauce which is Dairy, gluten (ingredient depending) and egg free, to the sauce just add meat of your choice or for a vegan option use veg of your choice.

Ingredients

Korma spice mix Find here
Onion
Garlic
2 sachets creamed coconut
Oat milk (use soya or rice milk for gluten free)
Sugar (see notes at bottom)
Sunflower oil

Method

Dice one onion and fry till soft in 2 teaspoons of sunflower oil, add 2 cloves of crushed garlic and add 3 teaspoons of korma spice mix and cook for 1 minute.
Add 1litre of oat milk (or substitute) and mix will to warm through.
Then add the creamed coconut, you can either add it straight to the sauce or warm the sachet as directed first it makes no difference.
Ensure it is mixed well and all the coconut is disolved in.
Add sugar* and mix then add your meat/veg and serve.

*Note on sugar if using oat milk or unsweetened soya add 2 teaspoons of sugar. If using sweetened soya or rice milk only add 1 teaspoon

Korma Spice mix

Mix equal amounts of the following spices to make a korma spice mix

Ground Coriander
Turmeric
Ground Cumin
Onion Powder
Garlic Powder
Chilli Powder
White Pepper
Ground Ginger
Celery Powder

Todays thought

Today for a change I will put about my day first instead of boring anyone who might be reading with another ramble lol

oh and check out my new banner :D

Alyssa saw a consultant today and starts antacids and a special formula for her reflux.
slightly worrying is her weight gain according to the drs scales has stayed static for 2 weeks which for a 10 week old isnt good.
Though she is feeding 3 hourly she isnt hungry but it just means she is probabaly brining up a bit too much of her feeds.

so the future at the moment is 4 months of antacids and 6 months dairy free for me and her, then I have to add dairy into my diet... which im not looking forward to Dairy free for 2 weeks if i eat anything with even a bit in now it upsets my stomach so god knows what it will be like in 6 months.

But looking forward to my pain free baba.

on a downside it meant leaving the house to take her, anxity levels through the roof! I couldnt sleep lastnight very well kept waking up in a panic and in the end i had to taxi it to the hospital, and even the thought of doing that had me shaking and in tears. I am so glad they changed emilys apt to next friday it gives me a whole week to recover before having to do the same trip again.

When it comes to Sophinas apt 2 towns away I think i'm going to be dragging the whole family I just cant do it.

So what was I thinking about lastnight... Names...

So what is about a name, we get named by our parents, if you discover a star you get to name it or even if you find a new animal its your right, right?

But what about things people didnt discover like us! who decided we were Homo sapiens, now you can go into the origins of the words ect but you gotta have some balls to go... you know what I think for the whole of the human population I will call us Homo sapiens

you could almost imagine the pub convo can't you... man one: "I have decided we are Homo sapiens" man two: "you what why have you decided that" man one: "I discovered you so i get to do it" man two: "no i discovered you *hic*"

its almost like going out and renaming another persons child isnt it lol

When language and speech were first developed no doubt there was a basic name for people in general because primal man didnt speak latin and the building blocks of speach definatly would not of involved such a long term. The same thing could be said for the sky and the sun and the sea these things would of been there and called something before they were named such probabaly something with an ug sound in it. S is not a natural sound for humans which is why alot of children struggle with it so the basic things which make up our lives such as sky and sea and sun wouldnt of been called that, it wuld of relied on the primitive tones and sounds.

another thing is why is cow called beef and pig pork.
We dont do this with most other things chicken, duck, lamb, boar, turky all called what they are but yet beef and pork are differant.

so thats my thought for today...

now my pro and con of the day...

Today the thinig that bothered me is... Leaving the house

The thing that made me smile was... how well behave Sophina was while i spoke to the dr about her sister

Progression of eating meat...

I wonder how we ended up eating meat.

at what point did a caveman decide to chow down on a cow.

The way I think about it, the natural urge to eat and the fact most animals are stronger, faster and bigger then us in general, humans would of started as plant eaters well it makes sense why take on something you dont know which in one way or another is bigger then you or faster you dont need to work for your dinner.

so to think of it we are probabaly looking at one cold winter where there was no food primal man began eating the dead of there village

now pretty gross right but at first they wouldnt consider skinning it why would they now thats pretty tough going isnt it
so now they would probabaly wait for the skin to rot minging or what

now after that they would of probabaly worked on how to remove the flesh. then when they ran out of the dead they would of considered eating other animals probabaly waiting for there dead and then moved onto killing them

now i bet theres a trick to killing animals with primitive tools so they probabaly had a few mishaps I find the mental image of a primitive man being chased by a pissed off cow a pretty good thought.

I hopefully in my intro post i explained i can be a bit random its a coping mechinisim

Lastnight my PTSD was very bad I am wanting to learn to drive but unfortunatly being in a strangers car triggers me so the though of doing it has triggered me

so i to try and sleep thought about cave men eating meat lol

I have to take Alyssa to the hospital tommorow, big struggle not sure what Im going to do.

There is taking the bus but i am so scared of buses at the moment. or we can walk which is also scary because well it just is

I need to decide one way or another because bus means taking her in a sling walking means the pushchair

actually i think it has to be walking cause of the apt time.

Hopefully get some meds for her belly and also a hypoallogenic formula so i can go back to mix feeding and have the odd milky treat every now and then.

John joked to me about being dairy free and soon they will all smell like sour milk like the chinese think we do because they dont drink milk and we all had a chuckle...

but today i went into the kids room and could smell sour milk I went and told john he couldnt smell anything
i went back in and it was soooo strong...
I found a cup sophina had chucked down the side of her bed with milk in it! it must of been from a day or so ago but to me it stank sooooooo bad so weird.

And to finish todays addition...

one thing that bothered me today: my PTSD, nothing bothers me more then the fact 10 years later that child molesting scum bag can have such an effect on my life.

One thing that made me smile is that I got the house almost totally sorted AND I am finally getting to the end of my never ending washing (I spend so much time washing Alyssas refluxy stuff that i get behind on the rest)

New year, new thoughts

I decided to start a blog to get rid of all the rubbish and plain weird thoughts in my brain.

If you wonder the kind of thing I mean, I spent hours pondering how cavemen wore clothes since they couldn't sew...

I'm suffering with PND with mixed anxiety's which is a big blow but I've decided to work on it and this is the start.

I hope to add one thing which bothers me and one thing which has made me happy in each entry to keep me sane.

I noticed that my problem is I just ask for help with the negative and people don't see the positive aspects in my life.

So to start off as I mean to go on...

Today I got really bothered when the housing association man used my toilet.... AND PEE'D ON IT!!! (I went and made john clean it off)

Today I felt really happy when I watched Alyssa smile like mad because Emily came over to her!

Now onward and outwards... time to start my graphs for my OU work... oh I am really bothered by graphs lol I HAAAAAAAAATTTTTTTEEEEEEEEEE them heaps loads lol
